Tigernut flour is obtained after grinding the tuber called tigernuts, chufa, tiger nuts.

Tigernuts are very high in fiber (with a high content of insoluble fiber) which is beneficial for cholesterol levels. It therefore facilitates digestion and intestinal transit.
It is also an anti-oxidant because it contains vitamin E and rutin.
It is rich in minerals: potassium, iron, magnesium and phosphorus, and in fatty acids.
It has a fairly high content of high quality vegetable proteins (26 g. Per 100 g. Of flour).
The glycemic index of tigernuts flour is low. He is 35.
